Canola, vegetable, or sunflower suggested

Sugar

Zucchini, grated and unpeeled
2 ½

All-purpose flour
King Arthur highly suggested!

Baking soda

Baking powder

Salt

Cinnamon
Penzey's highly suggested!

Chopped nuts
Pecans or walnuts suggested
Instructions
Put eggs out on counter to get to room temp. Heat oven to
350
°F
.
Beat eggs lightly. Beat in sugar gradually, then oil. Mix well.
Sift
All-purpose flour
with baking soda, baking powder, salt, and
Cinnamon
. Add to egg mixture
alternating
with handfuls of grated zucchini.
Stir in vanilla and nuts. Mix well.
Turn into 2 greased loaf pans.
Bake at
350
°F
on lowest rack for 45 minutes. Remove from oven and let stand for 10 minutes.
Then remove from loaf pans!
Eat one & freeze one for later! Enjoy!
